Sorry, My french was wrong. Its probably very similar to goose liver, also something Ive never had. But Chopped Liver is cooked, prepared and seasoned in onions and other spices.

It’s actually quite different. To make a foie gras you have to get one full liver. If you’re smart enough you’ll buy it without the vein (because it’s a pain to remove the vein, and it smells really bad too). Usually let it soak in milk for a few hours for it to be softened, then season it, wrapp it in a tight towel and cook it (still wrapped in the towel) in water.

I was surprised I liked it, but it’s pretty good. Not sure how easy it is to acquire in the US, but worth a look. Great on toast, just like you did with this stuff.

How about liverwurst? I personally love the stuff. And for anyone who does get ready to have your mind blown. Mayo, liverwurst and cucumber sandwich. Do it. Amazing.

Someone apparently came up with a way to make it without harming the goose (aside from slaughtering it, that is).
Then again, if you've ever encountered a goose, you might not care. Those things are huge and mean.

One weird thing I like is American braunschweiger (some kind of liverwurst). Most think it is disgusting (won't even try it), but I think it is delicious...
